酵素咸蛋 | Enzyme Salted Egg

酵素咸蛋

材料:

容器:玻璃瓶

做法:

  1. 把鸭蛋洗干净,放入玻璃瓶
  2. 倒入酵素养水(必须盖过鸭蛋)
  3. 读取总重量(鸭蛋+酵素养水),例:1200克
  4. 加入120克酵素养盐(总重量的10%),稍微搅拌以便均匀
  5. 密封盖好放在阴凉处30天即成

备注:如果蛋会浮起来用东西压一下

* 以酵素和养盐发酵和腌制的咸蛋不含化学成分,会更加安全与健康。更加容易消化, 棒棒!!!

Enzyme Salted Egg

Ingredients:

  • Duck eggs – 10
  • Enzyme water – sufficient to cover the duck eggs
  • Enzyme salt – 10% of duck eggs + enzyme water total weight

Utensil: Glass bottles

Method:

  1. Wash the ducks and put it in the  glass bottle
  2. Pour the enzyme water until the duck eggs are covered
  3. Measure the total weight (duck eggs + enzyme water), eg.: 1200g
  4. Add in 120g of enzyme salt (10% of the total weight), stir to mix well
  5. Seal the lid and let it ferment for 30 days

Remarks: If the eggs float, place something to press it
