鹰嘴豆泥(地中海风味小吃)| Hummus (Mediterranean Dip)

鹰嘴豆泥(地中海风味小吃)

材料:

  • 鹰嘴豆 – 250克
  • 白芝麻 – 200克 (亦可用芝麻酱)
  • 有机橄榄油 – 200毫升
  • 柠檬汁 – 50毫升

调味:

  • 小茴香粉 – 2茶匙(依据个人口味)
  • 海盐 – 适量(依据个人口味)
  • 甜椒粉 – 1 茶匙(依据个人口味)

做法:

  1. 预先把鹰嘴豆浸泡隔夜。
  2. 把白芝麻预先烤香,备用。
  3. 把鹰嘴豆洗净后,加水用小火煮熟(至软)。
    * 煮好的鹰嘴豆汤汁不要倒掉,做鹰嘴豆高汤备用。
  4. 把煮好的鹰嘴豆、其他材料、调味料和少许的鹰嘴豆高汤一起放入搅拌机里搅拌至细滑。
  5. 上桌时,可再淋上少许有机橄榄油和撒上少许甜椒粉更为吸引。

备注:

  • 鹰嘴豆泥可直接食用亦可拌沙拉会沾脆饼食用。

Hummus (Mediterranean Dip)

Ingredients:

  • Chickpeas – 250g
  • White sesame – 200g (Alternatively: Tahini saurce)
  • Organic olive oil – 200ml
  • Lemon juice- 50ml

Seasoning:

  • Cumin seed powder – 2 tbsp. (according to taste)
  • Sea salt – according to taste
  • Paprika powder – 1 tbsp. (according to taste)

Method:

  1. Soak the chickpeas for overnight.
  2. Roast the sesame until aromatic.
  3. Drain and rinse the soaked chickpeas, boil with water until soft.
    * Keep the chickpeas broth for later use
  4. Blend the chickpeas with all other ingredients and seasoning, add a small cup of chickpeas broth.
  5. When serving, add a little bit organic olive and sprinkle with a little paprika powder.

Remark:

  • Hummus can be serve directly or as dip for salad, chip or with bread.
